Was going to write a similar suggestion about this so I'll just comment here; on-top of this being a good idea, I think potentially another idea to fix the issue of shops being out of stock would be to actually use the sold items in the shop. For example, if a player sells their pork, then the stock value would go +1 for pork. An upper bound would probably be needed so it doesn't get absurdly high, but it would help emulate an actual shop better if this was in place.
